Do you always get a fried chicken look so good and delicious in the outside as the breading looked fluffy and crispy but disappointingly dry and tasteless? It’s always about how to prepare and cook the chicken meat. We had cook fried chicken a lot of times, theories and speculations on how to get the dreamed perfect fried chicken thrown on our conversations until we finally hit the solution.
Our Perfect Fried Chicken Recipe
- Chicken meat (preferable drumstick, chicken wings, chicken breast)
- 1 bulb of Garlic
- 6 tbsp of Oyster sauce
- 4 tbsp of Soy sauce
- 1 tbsp of Salt
- 2 grams of Black pepper
- Sliced Pineapple
- Crispy Mix Flour
First, we prepare the chicken meat to marinade only for 30mins. Mix garlic, oyster sauce, soy sauce, salt, black pepper and our secret ingredient, sliced pineapple serves as a meat tenderizer. It opens up the meat and allowing the spices and sauces to be absorbed inside the chicken meat or any other meat. That’s what we get from our research.
After 30mins, put the chicken meat to a drainer in order to dry and then coated with plain flour, then coated with any commercial mix flour (we used Crispy Mix flour).
Frying is a tricky part also. You have to have a kilo of palm or corn oil use to fry the chicken. It is always better to do deep frying when frying a crispy, delicious chicken. When the oil is hot, put the marinated, freshly flour coated chicken into the pan and wait until the chicken color turns to brown, not dark brown or light brown, but the perfect brown. It usually appears after 15-20mins.
